Late afternoon. Victoria, Canada. Ron and I were on the hunt for salmon. Not just any salmon but the best salmon in town. Our host at the WorldMark Resort recommended the Victoria Harbour House Restaurant, if we wanted the best. After securing early reservations, we trundled off to meet one of the best meals we'd ever eaten.
Seated at our window-side table with a nice view of the harbour, our waiter, properly dressed in black tie formal, introduced himself bearing icy glasses of water. We informed him that, "we're here for the salmon." He said, "of course you are", with a knowing smile.
He asked if he could recommend a wine to accompany the best salmon. Ron, who had been perusing the wine list, asked about the Pinot Gris, to which our elegant waiter nodded in full agreement.
Soon enough, our wine arrived, followed in perfect time by our meal. Delicious aromas of expertly grilled salmon wafted from our plates. Each bite of the rich, melty salmon was neatly sliced by a sip of the fresh, slightly fruity acid notes of the Pinot Gris. We were both in heaven. Ron couldn't have chosen a more perfect match. Maybe it was the magic of Victoria, or the elegant restaurant in the lovely harbour setting. Either way, it was a meal we'll never forget. One that was worth every lingering moment.
